Instructions

Step One

Place the short ribs in a large casserole dish or storage container and pat dry.

Step Two

In a blender or food processor, blend together all the marinade ingredients. Pour on top of the short ribs and turn the pieces a few times to make sure they are thoroughly coated. Cover and refrigerate for at least 24 hours, or up to 2 days.

Step Three

One hour before grilling, take the ribs out of the marinade and scrape off any excess with your hands. Place the ribs on a pan so they’re ready for the grill and let come to room temperature.

Step Four

Heat a gas grill to medium-high heat or build a fire in a charcoal grill and make sure the grill grates are clean. Grill the short ribs over medium-high heat, turning over once, until pleasantly charred but not overcooked, 2 to 3 minutes each side.

Step Five

Put the short ribs on a platter and serve with sides of ssamjang, rice, kimchi, and lettuce, if desired.
